Sushi is a Japanese dish prepared with white or brown rice and vinegar combined with different ingredients as seafood (both raw or cooked), vegetables and sometimes with tropical fruit. Sushi is often served with a pickled ginger, wasabi and soy sauce.

Sushi originates from Southeast Asia. It was a way to store the fish in fermented rice for possibly months at a time. The lacto-fermentation of the rice kept the fish from spoiling. The rice would be discarded before eating the fish. The fish had a sour taste to it. During the Muromachi period (1336-1573) vinegar was added to enhance both the taste and preservation of the fish. During the Edo period (1603-1868) fish was served over vinegared rice. Today Sushi is served with fresh caught fish, vinegared sushi rice, fillings, toppings, condiments and prepared in a variety of ways.
